1 tsp vanilla extract
2 ⅔ cups Strawberries (hulled)
½ cup powdered sugar
1 cup full-fat Greek yogurt (beaten)

Preparation steps

1.
Blend the vanilla extract, strawberries, and icing sugar to a smooth purée in a food processor.

Half-fill 8 small lolly moulds with some strawberry puree and then top with the Greek-style yoghurt and then more of the strawberry puree. Fit the handles and sticks of the moulds in place.
3.
Freeze the lollies for at least 4 hours, or preferably overnight. To remove the lollies from the moulds, dip them in hot water for a few seconds and release them. Serve immediately.
4.
Variation: Substitute the strawberries for half blackberries, half raspberries.
