Ingredients

For the dough
600 grams Pastry flour
2 packets Dry yeast
1 tsp salt
300 milliliters lukewarm milk
1 Tbsp sugar
For the topping
400 grams Whipped cream
2 Tbsps Tomato paste
4 ripe Apple (such as Granny Smith)
15 Walnut
300 grams small button Mushroom
salt
2 scoops Mozzarella (each around 125 grams) (approximately 4 ounces)
2 Tbsps Canola oil
mint (for garnish)

Preparation steps

For the dough: Combine the flour, yeast and salt. Whisk the milk and sugar together then add to the dry ingredients and mix with the dough hook attachment until the dough is no longer sticky. Knead again vigorously with your hands, transfer to a bowl, cover with a cloth and let rise for about 1 hour in a warm place, until doubled in bulk.

Meanwhile, for the topping: Mix the sour cream and tomato paste and season with salt. Rinse the apples, cut in half, remove the seeds and cut the halves into thin wedges. Coarsely chop the nuts. Wipe the mushrooms with a damp cloth and cut into slices. Preheat the oven to 200°C (approximately 400°F). Knead the dough on a lightly floured work surface, divide into 4 portions and roll out each portion into a thin disc.

Transfer to greased pizza pans, spread the sauce over the center, top with the apple slices, walnuts and mushrooms. Cut the mozzarella into cubes and distribute over the pizzas. Bake for 30-35 minutes. Drizzle with a little oil and sprinkle with mint leaves.
