Hearty Baked Pasta

- 300 grams Spinach
- 300 grams Tortiglioni pasta
- 400 grams coarse, raw Sausage
- 2 onions
- 2 Tbsps vegetable oil
- 125 grams canned Tomatoes
- salt
- freshly ground peppers
- Nutmeg
- 1 Tbsp butter
- 1 Tbsp Pastry flour
- 250 milliliters milk
- 100 grams Gruyere (grated)
Preparation steps
Rinse spinach. Saute, dripping wet, in a pan with a little boiling salted water. Drain, rinse in cold water and drain well.
Cook pasta in plenty of boiling salted water until al dente, drain and rinse in cold water, drain well.
Remove casing from the sausage and chop. Peel and chop onions. Heat oil in a pan and saute onions for a few minutes, add sausage meat and saute until crumbly. Add tomatoes and bring to a boil, season with salt and pepper and set aside.
Heat butter in a saucepan, add flour and saute, whisking, until light brown. Add milk, stirring, bring to a boil and simmer for 5 minutes. Season with salt, pepper and nutmeg.
Mix spinach with drained pasta. Spread half of pasta in a greased baking dish and top with sausage mixture. Spread with remaining pasta and spinach mixture and pour sauce over, sprinkle with grated cheese. Bake in preheated oven at 200°C (approximately 400°F) for about 25 minutes. Remove from the oven and serve.
