Hearty Baked Pasta

- 5 Tbsps softened butter
- 3 Tbsps ground Pine nuts
- 500 grams Rigatoni
- 150 grams baby Spinach
- 1 onion
- 2 garlic cloves
- 1 Tbsp olive oil
- 250 grams Mascarpone
- 2 Tbsps Pastry flour
- 100 grams freshly grated Parmesan
- 2 eggs
- salt
- freshly ground peppers
- Nutmeg
- baby Spinach (for garnish)
Preparation steps
Preheat the oven to 200°C (approximately 400°F). Fold the aluminum foil into a 30 cm (approximately 12 inches) square. Grease one side with butter and sprinkle with ground pine nuts.
Coat the inside of the springform pan with butter and sprinkle with ground pine nuts. Cook the pasta in salted water until al dente, drain, rinse and drain well. Place a layer of pasta in the prepared springform pan.
For the filling, trim the spinach, rinse, and spin dry. Peel the onion and garlic. Finely chop and saute in hot olive oil. Add the spinach and saute briefly. Combine the spinach mixture with the mascarpone, flour, Parmesan and eggs.
Add the remaining noodles to the spinach mixture. Season with salt, pepper and nutmeg. Carefully fill the springform pan. Cover with the prepared foil. Bake for 50-60 minutes. Remove the foil and unmold onto a preheated plate. Serve garnished with spinach leaves.
