4 Tbsps apple cider vinegar

Preparation steps

1.

Cook the pasta in boiling salted water with 1 tablespoon oil until al dente, then drain. Remove 1/2 cup of cooking water. Rinse pasta in cold water and drain.

Rinse cabbage, trim, cut into thin strips and place in boiling salted water for 4 - 5 minutes. Blanch, drain, rinse in cold water and drain again. Rinse bell peppers, trim, cut in half, remove seeds and ribs and finely chop.

3.

Cut sausage into thin slices. Mix with the cabbage. Add oil with mustard and vinegar, stir in 1/2 cup of the pasta cooking water, season with salt, pepper and paprika to taste and mix with the pasta with the salad. Before serving, garnish with chives.
