250 milliliters milk
50 grams Pastry flour
1 bunch mixed Fresh herbs (such as borage, watercress, parsley, chives)

Preparation steps

Separate the eggs.

Heat the flour and butter in a pan until foamy and stir in the milk. Continue to cook while stirring for about 5-6 minutes. Remove from the heat and let cool slightly. Stir in the egg yolks and cheese, season with salt, pepper, and nutmeg. Beat the egg whites until stiff and gradually fold into the mixture along with the chopped herbs. Prepare the baking dish by brushing with butter and sprinkling with breadcrumbs. Pour the souffle batter into the prepared souffle dish and bake in a preheated oven at 200°C (approximately 375°F) for about 40 minutes, until golden brown. Serve immediately.
