75 grams butter

150 grams freshly grated Cheese (such as Emmentaler, Gruyère)
50 milliliters Whipped cream
3 Tbsps Crème fraiche
2 Tbsps Pastry flour
1 Tbsp freshly chopped parsley
1 tsp freshly chopped thyme
1 tsp freshly chopped Basil

Preparation steps

1.

Butter four ramekins and sprinkle with breadcrumbs. Preheat oven to 180°C (approximately 350°F).

Separate eggs. Beat softened butter with egg yolks and nutmeg until fluffy. Alternately add grated cheese, cream and creme fraiche and stir. Whisk egg whites until stiff and fold into flour and herbs. Season with salt.

3.

Pour mixture into ramekins and bake about 30 minutes in the preheated oven until golden brown. Serve immediately.
