700 grams waxy potatoes
200 grams Chorizo
1 shallot
200 grams orange and green paprika
1 Tbsp olive oil
salt
sweet ground paprika
8 Quail egg
½ handful parsley

Preparation steps

Boil the potatoes in salt water for about 20 minutes. Cut the chorizo in 1 cm thick slices and saute in a nonstick pan for 2-3 minutes. Remove from the heat. Peel and finely chop the shallot. Rinse, halve, remove the seeds and ribs and cut the peppers into strips.

Cut the cooled potatoes in 5 mm thick slices and saute in the chorizo grease for 5 minutes on each side until golden brown (add 1-2 tablespoons of olive oil if needed). Mix in the shallot and peppers. Saute for 3-4 minutes. Season with salt and a pinch of paprika.

Fry the quail eggs in the remaining oil. Serve the fried potatoes with the chorizo, peppers and fried quail eggs and seasoned with parsley leaves and pepper.
