Nutritional values

Almost everyone likes courgettes, their slightly nutty taste and pleasant mildness make them versatile and so popular. They also have a lot to offer in terms of health: Minerals such as potassium and magnesium are important for metabolic processes and relaxed muscles and nerves. The green vegetables also score points with blood-forming iron, which is needed for the transport of oxygen in the body.

If you would like to make the salad vegetarian, replace the cooked turkey ham with dried tomatoes. An extra portion of healthy fats comes with roasted pine or sunflower seeds, which you sprinkle over the salad. Usually we recommend whole grain products, as this offers more minerals, but with tortellini this variation is only available in a few shops. However, if you have the opportunity to use whole grain tortellini, you can use it to enhance your salad
, which is easy to prepare and ideal for bringing to a garden or barbecue party, or for a healthy lunch the following day.
