1 Red onion
1 Red Bell pepper
100 grams smoked Pancetta
1 Tbsp vegetable oil
600 grams Sauerkraut (from a jar)
1 bay leaf
3 Juniper berries
2 allspice
800 milliliters Beef broth
salt
freshly ground peppers
2 Tbsps scallions

Preparation steps

Peel the onion and chop finely. Rinse the pepper, halve, remove the seeds and finely dice.

Heat the oil in a saucepan and fry the bacon. Add the onion and pepper and sauté briefly. Stir in the drained sauerkraut and add the spices and broth. Season with salt and pepper and simmer over medium heat for 15-20 minutes.

3.

Season the soup again, distribute between warmed serving bowls and serve sprinkled with chives.
