This omelet might look impressive but is incredibly easy to make with only a few ingredients. This dish is an excellent source of protein and is rich in vitamins A and D.
Don't have chervil on hand? Feel free to substitute with fresh tarragon or other fresh herbs of your choice.
Preparation steps
Rinse and peel the scallions and chop the green sections into the finest possible rings. Cut the white sections into small cubes. Peel the onion and finely chop. Chop the parsley and chervil finely.
Combine the eggs and mineral water and season with salt and pepper. Whisk well with a fork, but not until fluffy. Mix in the herbs.
Melt the butter in a nonstick pan and sauté the scallion cubes and the onion until soft over medium heat.
Add the scallion rings to the pan and cook briefly. Pour in the egg and herb mixture and cook over medium heat for about 5 minutes. Turn the omelet over and cook for another 2 minutes.
Meanwhile, rinse, trim and quarter the radishes.
Cut the omelette into equal pieces and arrange on 2 plates. Serve garnished with the radishes and showered with the basil leaves.
