11 ozs small Kohlrabi
1 Tbsp apple cider vinegar
1 tsp Walnut oil
2 eggs
salt
7 ozs Zucchini (0.5 zucchini)
1 Dill
1 parsley
1 generous pinch dried thyme
peppers
3 ½ ozs Cherry tomatoes
2 tsps olive oil
½ oz Pine nuts (1 TBSP.)
¼ oz planed Parmesan

Preparation steps

1.

Clean, wash and peel kohlrabi, slice very finely, mix with vinegar and walnut oil and set aside.

Meanwhile, beat eggs in a bowl, whisk and salt. Clean, wash and finely slice the zucchini. Wash dill and parsley, shake dry. Chop the parsley and half of the dill, add to the eggs and season with thyme and pepper.

Wash cherry tomatoes. Heat 1 tsp oil in a frying pan. Add cherry tomatoes and sauté over medium heat for 4 minutes. Remove from pan and set aside.

Add zucchini slices to pan and sauté over medium heat for 4 minutes. Add egg mixture and let it fry for 4-5 minutes.

Fold omelet, arrange on a plate and drape marinated kohlrabi next to it in a wavy pattern. Add the tomatoes and sprinkle the pine nuts, Parmesan and remaining dill over the omelet.
