- 1 clove garlic
- ½ bunch parsley
- 8 (no unit) eggs
- 1 tsp salt
- 1 tsp peppers
- 3 ½ ozs Cherry tomatoes (about 10)
- 1 handful Basil
- 3 ½ ozs cream cheese
- 2 Tbsps sweet mustard
- 2 Tbsps Canola oil
- 2 tsps butter
- 7 ozs Smoked salmon (in slices)
- 1 sm handful Cress
Preparation steps
Peel and chop the garlic. Wash parsley, shake dry and chop. Whisk eggs with parsley and garlic, season with salt and pepper.
Wash tomatoes and cut into slices. Wash basil and shake dry. Mix cream cheese and mustard, season with salt and pepper.
Heat half the oil and half the butter in each of 2 pans. Divide the egg mixture between the two pans and toss evenly in the pan. Top each with tomatoes and basil and cook, covered, over medium heat for 3-4 minutes. Carefully loosen egg mixture from bottom of pan. Spread mustard-cream cheese mixture over 1 omelet half each and top with salmon slices; fold omelets together and cook, covered, 2 minutes.
Cut cress from the bed. Cut omelets in half, spread on plates and sprinkle with cress.
