250 grams butter
2 egg yolks
4 Tbsps dry white wine
1 Tbsp lemon juice
salt
½ bunch Basil
white, freshly ground peppers

Preparation steps

Melt the butter in a pan, and skim the foam that rises to the top. Add the egg yolks and the wine to a metal bowl. Place over a hot water bath, and beat until foamy. Remove the pan from the heat, and gradually incorporate the butter. Start with a few drops of butter, and whisk until combined. Increase the amount to a thin stream, whisking constantly, until a thick sauce has formed.

Rinse the basil and pat dry. Remove the leaves from the stems and finely chop. Mix the basil into the sauce, and stir to combine. Season to taste with lemon juice, salt, and pepper and serve.
