This recipe does not use any palm oil at all. Instead, it focuses on the  peanuts. They provide a lot of protein and contain mainly mono and polyunsaturated fatty acids. These have a beneficial effect on the brain and heart, among other things.

The great thing about peanut butter is its versatility: whether on a sandwich or in a combination with banana slices, it tastes heavenly. You can also refine your Nice cream with peanut butter!

18 ozs Peanuts (salted or plain)
5 tsps honey
5 Tbsps sunflower oil
7 Tbsps butter
salt (to taste)

Preparation steps

1.

Finely chop the peanuts in a food processor. Add to a large bowl, and mix in the honey, oil, and butter.

Process with an immersion blender until a smooth puree has formed. Season to taste with salt, then place into clean screw-top jars.

The peanut butter will last in the refrigerator about 4 weeks.
