90 grams Pastry flour

Preparation steps

Combine the flour with salt in a bowl and slowly pour in 50 ml (approximately 1/4 cup) of lukewarm water. Knead by hand to make a smooth dough, cover and let rest about 15 minutes. Divide the dough into 4 equal portions and roll out each portion on a floured surface into a thin round cake about 15 cm (approximately 6 inches) in diameter.

Heat a nonstick pan and cook the tortillas on each side. Once the tortillas inflate, press with a spatula so that they bake evenly. The tortillas are done when they show dark brown spots. Keep tortillas warm.

Rinse the peppers, cut in half, remove the seeds and ribs and cut into small cubes. Peel and chop the red onion.

Mix the pepper and onion together and season with lime juice, salt and pepper. Distribute some of the pepper mixture on the tortillas, then sprinkle with cheese. Place on a baking sheet and bake in a preheated oven at 200°C (approximately 400°F) for a few minutes, until the cheese begins to melt. Garnish with cilantro leaves and serve.
