- 4 ozs fresh Spinach
- 4 ozs Mung bean sprouts
- 4 ozs Tofu
- 20 Wonton wrapper (frozen)
- 20 sprigs Chives
- 1 egg white
- 1 clove garlic cloves
- ½ bunch scallions
- 3 Tbsps soy sauce
- 3 Tbsps Peanut oil
- freshly ground peppers
Preparation steps

Rinse spinach, spin dry and slice into strips. Drain mung beans. Rinse tofu with cold water, pat dry and dice. Thaw out wonton wrappers and let rest under a damp tea towel. Peel and press garlic. Rinse and slice scallions.
Heat oil in a pan and cook scallions and garlic. Add spinach, tofu and mung beans. Season with soy sauce and pepper.

Brush wrappers with beaten egg whites. Add vegetable filling to each and fold up corners. Tie with a chive stem and steam in a bamboo basket for about 10 minutes. Serve with soy sauce.
