- 36 ozs starchy potatoes
- 1 egg
- salt
- Nutmeg (freshly grated)
- 7 ozs Pastry flour
Preparation steps
Step 1
Thoroughly rinse the potatoes. Cook in boiling water for 25 minutes, until soft. Prepare and measure the remaining ingredients.
Step 2
Drain and peel the potatoes.
Step 3
Pass the peeled potatoes through a ricer. Place on a work surface and let dry slightly.
Step 4
Spread out the potatoes, then season with salt and nutmeg. Form a well in the center, add the egg, and beat lightly. Sprinkle the flour over the top, then knead until a smooth dough forms (it shouldn't stick to your hands). The amount of flour may vary somewhat.
Step 5
Place the dough on a floured work surface. Form into finger-thick rolls, and cut into 1/2 inch wide pieces.
Step 6
Flour your hands and roll the gnocchi into small balls.
Step 7
Form the gnocchi on a gnocchi board, or indent the dumplings with the tines of a fork. Cover with a kitchen towel and let rest for 10 minutes.
Step 8
Using a slotted spoon, place the gnocchi into a pot of boiling salted water. Simmer the gnocchi for 5 minutes, until they float to the surface.
