Hungarian-Style Peppers and Tomatoes with Sausage

- 2 onions
- 2 red Bell pepper
- 2 yellow Bell pepper
- 3 Kabanos
- 3 Pickled cucumbers
- 2 Tbsps butter
- 1 Tbsp sugar
- 1 Tbsp White vinegar
- 1 Tbsp Tomato paste
- 1 can pureed Tomatoes (400 ml)
- salt
- freshly ground peppers
- 1 tsp sweet ground paprika
- 1 generous pinch cayenne pepper
- chopped flat parsley (for garnish)
Preparation steps
Peel the onions, halve and cut into strips. Rinse the peppers, halve lengthwise and remove the seeds and white ribs and roughly chop the peppers. Slice the sausages. Cut the pickles into cubes.
Melt the butter in a saucepan and saute the sausages until lightly browned. Add the onions and saute until translucent. Add the sugar and deglaze with the vinegar. Add the peppers and pickles, stir in the tomato paste and the tomato puree, and add 200 ml (approximatley 1 cup) of water. Add the paprika and cayenne pepper and season with salt and pepper. Cook over medium heat, stirring frequently until the vegetables are tender and the sauce is lightly thickened, about 20 minutes.
Spoon the lesco into cups and serve garnished with chopped parsley. Serve with fresh baguette bread.
