Parsley scores with vitamin E, which protects our body cells from the harmful influence of free radicals. Spelt flour tastes deliciously nutty and is rich in nutrients such as magnesium and B vitamins. In addition, it can lighten the mood due to the also contained tryptophan, which is converted into the good mood hormone serotonin.
Like whole wheat flour best? Wonderful! Then just bake the bread completely with it. You can replace the parsley with other herbs as desired. The bread becomes Mediterranean with a mixture of thyme, oregano, and rosemary - if you like, knead in some finely chopped dried tomatoes.

- 2 ozs parsley (1 bunch)
- 10 ¾ ozs Spelt flour (Type 630)
- 6 ozs Whole Grain Spelt Flour
- ¼ oz Baking powder (1 TBSP.)
- ¼ oz baking soda (1 TBSP)
- salt
- 1 Tbsp honey
- 1 egg
- 1 oz butter
- 12 ozs Buttermilk (approx.)
Preparation steps
Wash parsley, shake dry and chop finely. Sift flours into a bowl and mix with baking powder, baking soda, 1 tsp. salt and honey. Beat egg with butter and buttermilk. Add mixture to flour and stir with a fork until everything is combined into a dough that is not too wet. Mix in parsley and incorporate a little more flour or buttermilk if needed.
Shape dough into a round loaf, cut 2 slashes crosswise, and place on a baking tray lined with baking paper. Bake the dough in a preheated oven at 200 °C / 400 ˚ F for 10 minutes.
Reduce the temperature to 190 °C / 375 ˚F and bake the bread for another 25-30 minutes. Then remove the bread (do a knock test!) and let it cool on a cooling rack.
