18 ozs starchy potatoes
2 eggs
8 ozs Pastry flour
1 ½ tsps Baking powder
10 ozs Buttermilk
salt

6 Tbsps butter

Preparation steps

1.

Rinse 2/3 of the potatoes and cook for about 30 minutes in boiling water. Drain, peel, and press through a potato ricer while still hot. Peel the remaining potatoes, rinse, grate, and squeeze out the excess water in a kitchen towel.

Separate the eggs and beat the yolks with the flour, baking powder, the pressed potatoes and shredded potatoes, and milk. Season with salt and pepper. Beat the egg whites with a pinch of salt until stiff, then fold into the mixture.

In a pan, melt some butter, and ladle in some of the batter. Fry for about 4 minutes on medium heat, turn and continue to cook until golden brown for another 4 minutes. Serve with small pieces of butter.
