- 2 eggs
- 200 grams Pastry flour
- 300 milliliters milk (or beer)
- 1 Tbsp honey
- 1 generous pinch lemon zest
- 1 tsp lemon juice
- 3 tart Apple
- vegetable oil (for frying)
- powdered sugar (for dusting)
Preparation steps
1.
Separate eggs. Whisk flour with milk until smooth in a bowl. Whisk egg yolks with honey and lemon zest, add to flour mixture. Beat egg whites with lemon juice until stiff. Fold into batter.

Heat oil in a deep pan or a fryer to 170°C (approximately 340°F).

Peel apples and core with an apple corer. Cut into 1 cm (approximately 1/2 inch) slices and dip into batter. Drain lightly and cook in hot oil for about 2-3 minutes or until golden brown, turning once.
4.
Drain apple fritters on paper towels and serve dusted with powdered sugar.
