4 Tomatoes
1 big, red onion
1 Cucumber
2 stalks Celery
60 grams black Olives
2 Tbsps Caper
1 garlic clove
2 Tbsps white balsamic vinegar
salt
freshly ground peppers
2 handfuls Basil

Preparation steps

1.

Cut or tear bread into cubes. Heat 2-3 tablespoons of olive oil in a pan and cook bread cubes until golden brown on all sides, drain on paper towels. Rinse and dry tomatoes, cut into wedges. Peel onion and cut into thin rings. Peel cucumber and cut into cubes.

Rinse celery, remove strings and cut into 2 cm (approximately 3/4 inch) thick slices. Drain olives and the capers. Cut garlic in half and rub salad bowl with it.

Combine all salad ingredients in a large bowl. Whisk vinegar with remaining oil, season with salt and pepper. Toss salad with the dressing and arrange in 4 small bowls. Sprinkle with croutons and garnish with basil leaves. Serve.
