Italian Style Marinated Beef

- 1 shallot
- 50 grams Bacon
- 1 golden raisin
- ½ Red paprika
- 1 Red Pepperoncini
- 40 grams Caper
- 1 whole lemon
- 2 Tbsps Pine nuts
- 400 grams Beef fillet (center cut or shoulder)
- salt
- freshly ground peppers
- 2 Tbsps olive oil
- 125 milliliters dry white wine
- 150 milliliters Veal stock
- 1 Tbsp finely chopped Fresh herbs
Preparation steps
Peel and mince the shallot. Dice the bacon. Coarsely chop the raisins. Rinse and finely chop the red bell pepper and peperoncini. Drain the capers. Juice the lemon. Toast the pine nuts in a dry skillet and allow to cool.
Slice the beef into 1 cm (approximately 3/8 inch) thick slices and season with salt and pepper. Heat the olive oil in a large skillet and brown the meat on both sides. Transfer to a shallow dish. Add the shallot and bacon to the pan and cook until the bacon is crisp. Stir in the raisins, bell pepper, peperoncini and heat through.
Deglaze the pan with the white wine and veal stock. Simmer until the liquid has reduced by about half. Add the capers and lemon juice, stir in the herbs and season with salt and pepper. Pour the mixture over the cooked beef and sprinkle with the toasted pine nuts. Refrigerate for at least one hour to let the flavors infuse. Serve cold. or at room temperature.
