- For Grilled Cilantro Chicken
- ¼ cup olive oil
- ¼ cup fresh Lime juice
- ½ cup fresh cilantro (finely chopped)
- ½ Tbsp ground Cumin
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 boneless, skinless Chicken breasts (halves)
- For Fruity Couscous
- ⅔ cup dry Couscous
- 0.333 cup slivered almonds
- ¼ cup dried Apricot (finely chopped)
- ¼ cup diced Red pepper
- 1 tsp Cumin
- 2 scallions (rinsed; trimmed and thinly sliced)
- salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

For Grilled Cilantro Chicken:

In a large bowl, combine olive oil, lime juice, cilantro, cumin, salt and pepper. Set aside.

Rinse chicken under cold running water and pat dry with paper towels. Place chicken in marinade and turn to coat. Let stand at room temperature, turning several times, for 30 to 45 minutes.

Prepare heat grill to high heat. Remove chicken from marinade and grill chicken, turning often, until juices run clear and chicken is cooked through, about 15 to 20 minutes total.
