- 250 grams Bulgur
- 1 shallot
- 500 grams Ground lamb

- 1 shallot (finely chopped)
- 250 grams Ground beef
- 2 Tbsps vegetable oil
- ½ tsp Cumin
- ½ tsp cinnamon
- 50 grams Pine nuts
- Limes (for garnish)
Preparation steps
Soak the bulgur in a bowl of cold salted water about 10 minutes. Drain, rinse and squeeze dry.
Peel and finely chop the shallot and place in a bowl with the ground lamb, season with salt and pepper and mix to combine. Cover and refrigerate 1 hour.
For the filling: Saute the shallot in oil until translucent. add the beef and cook until browned. Add the pine nuts, cumin and cinnamon, season with salt and pepper. Remove from heat.
Remove the lamb mixture from the refrigerator and shape into walnut-sized pieces. Press a hole in the mixture and spoon about 1 teaspoon of the filling inside. Enclose the filling in the lamb mixture and shape into sausage shape croquettes, refrigerate 30 minutes. Heat oil in a skillet and saute the croquettes until browned all over and cooked through, 8-10 minutes. In hot fat. Drain on paper towels and serve.
