2 garlic cloves
1 tsp ginger (freshly grated)
2 red chili peppers (sliced ​​into rings)

Preparation steps

Halve cabbage and cut into approximately 1.5 x 1.5 inch wide pieces. Layer cabbage and salt in a large bowl, finishing with salt. Cover bowl with an upturned, matching plate and place a weight on top (for example, a heavy stone). Keep for 4 -5 days in a cool, dark place.

Afterwards, drain all liquid and rinse cabbage under running cold water. Squeeze excess water with hands, mix cabbage with cayenne pepper, scallions, garlic, ginger, chile pepper and sugar. Mix well. Place cabbage into prepared preserving jar, fill with water and seal well. Store in refrigerator. Wait at least one day before serving kimchi. However, kimchi should be all used within 2-3 weeks.

To prepare soup, heat 18 ounces of kimchi in broth. Add fresh mushrooms to taste.
