Ingredients

For the Tzatziki
1 small Cucumber
4 garlic cloves
500 grams Yogurt (0.1% fat)
150 grams Quark
1 tsp olive oil
salt
freshly ground peppers
For the lamb rolls
2 garlic cloves
500 grams Ground lamb
1 Tbsp olive oil
1 ½ tsps sweet ground paprika
½ tsp spicy ground paprika
salt
freshly ground peppers

Preparation steps

Rinse and peel the cucumber, then coarsely grate. Squeeze the excess liquid from the cucumber. Pas the garlic through a press into the cucumber. Mix the yogurt with the quark and the olive oil until smooth. Mix in the cucumber mixture and stir until combined. Season to taste with salt and pepper, and chill in the refrigerator until ready to serve.

Peel the garlic, and pass through a press into a bowl. Mix with 1 tablespoon of water, 1 tablespoon of olive oil, both varities of paprika, and the lamb. Season to taste with salt and pepper, and knead until a smooth mixture forms. Wet your hands and forms into 16 eight cm (approximately 3 inch) long rolls.  Heat some olive oil in a pan, and sauté the rolls for 10 minutes (you could also do this on a well oiled grill). Serve the kofte with the tzatziki.
