22 ozs Kohlrabi (about 2 kohlrabi)
salt
1 scallion
1 oz Wild garlic (or chives)
1 ½ ozs parsley (1 bunch)
12 ozs Cottage cheese
5 ozs Yogurt (low-fat)
peppers
1 tsp lemon juice
3 ½ ozs Whole wheat flour
2 eggs
2 Tbsps sesame
7 ozs whole grain breadcrumbs
2 Tbsps olive oil

Preparation steps

1.

Clean and peel kohlrabi and cut into slices about 1/2-inch thick. Cook in boiling salted water for 5 minutes, remove, rinse with cold water and pat dry.

Meanwhile, clean the spring onion, wash and cut into fine rings. Wash wild garlic and parsley, shake dry, and chop both finely. Mix cottage cheese with yogurt. Mix in onion and herbs and season with salt, pepper, and lemon juice.

Sprinkle flour on a plate. Crack eggs in a plate, whisk, salt and pepper. Put sesame seeds and breadcrumbs on a plate.

Turn kohlrabi slices first in flour, then in egg and breadcrumbs. Heat a non-stick frying pan, brush with 1 tablespoon oil and fry half of the kohlrabi slices on both sides for about 3 minutes each over medium heat until golden brown; keep warm. Fry other half with remaining oil. Serve the kohlrabi slices with the cottage cheese.
