- ⅜ cup olive oil
- 4 lamb chops
- 2 Red onions (cut into wedges)
- 1 small Pumpkin (peeled, seeds removed and cut into slices)
- 1 red pepper (deseeded and sliced)
- 1 yellow pepper (deseeded and sliced)
- 1 Orange pepper (deseeded and sliced)
- 1 garlic clove (broken into cloves)
- 4 sprigs thyme

Preparation steps

Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

Heat the oil in an ovenproof dish on the hob over a medium heat and brown the lamb chops on all sides then remove them from the dish and set them aside.

Add the onions and pumpkin to the dish, stir gently to coat them with the oil and cook gently for 5 minutes then add the peppers and mix well. Return the lamb chops to the dish, add the garlic and thyme sprigs and season with salt and pepper.

Cover the dish with tin foil and roast in the oven for 25 - 30 minutes or until the meat is cooked through and the vegetables are tender.
