Ingredients

For the Tzatziki
1 small Cucumber
4 garlic cloves
500 grams Yogurt (0.1% fat)
150 grams Quark
1 tsp olive oil

For the minced lamb skewers
2 garlic cloves
1 onion (approx 60 g)
500 grams Ground lamb
3 Tbsps olive oil
1 tsp sweet ground paprika
½ tsp spicy ground paprika

Preparation steps

Rinse and peel the cucumber. Grate into a bowl. Squeeze the grated cucumber, then discard the juice. Peel the garlic, and pass through a press into the bowl. Mix the yogurt with the quark and oil until smooth. Mix the yogurt mixture with the cucumber mixture. Season to taste with salt and pepper, and stir to combine. Refrigerate until ready to serve.

For the skewers, peel and finely dice the onion and garlic. Mix the onion, garlic, 1 tablespoon of olive oil, 1 tablespoon of water, and both varieties of paprika into the ground lamb. Season with salt and pepper, and mix until thoroughly combined. Form the ground lamb mixture around 16 wooden skewers, and shape into 6 cm (approximately 2 1/2 inch) long rolls. Heat 2-3 tablespoons of olive oil in a pan, and cook the skewers on all sides for 10 minutes.

Place the tzatziki in small bowls. Place 4 skewers on a plate, and serve with the sauce.
