- 4 Lamb steak (each baout 200 grams)
- 4 shallots
- 3 garlic cloves
- 2 sprigs rosemary
- 2 sprigs parsley
- 500 milliliters dry Red wine
- 4 Tbsps olive oil
- 1 tsp Harissa powder
- freshly ground peppers
- Sea salt
Preparation steps

Rinse steaks and pat dry, place into a shallow dish. Peel shallots and garlic, cut both into fine strips. Rinse rosemary and parsley, shake dry, pluck off leaves and chop finely. Combine shallots, garlic and herbs with wine. Add oil, harissa and pepper, mix well and pour marinade over meat. Refrigerate, covered, for at least 2 hours or better overnight.

Drain steaks and grill on a hot grill for 2-3 minutes per side over direct fire. Move to the edge and grill for 5 more minutes or until pink inside. Season with sea salt and serve.
