4 pcs Lamb loin (each 160 grams)
salt
freshly ground peppers
cayenne pepper
2 Tbsps vegetable oil
2 Pear (peeled, cored and diced)
Ground cinnamon
50 grams butter
30 grams sugar
5 fresh Figs (rinsed and cut into pieces)
3 onions (finely chopped)
2 carrots (peeled and diced)
Bell pepper (1 red and yellow, in strips)
2 Star anise
100 milliliters Chicken broth

Preparation steps

1.

Heat 30 grams (approximately 2 tablespoons) butter in a frying pan, add sugar and cook until caramelized over low heat, then add the pears, fold into the syrup and sprinkle with cinnamon. Cook 5 minutes and set aside.

Cook onions in remaining butter in a large saucepan over low heat. Add figs, carrots and bell peppers. Pour in the broth and the star anise, cover and simmer about 45 minutes. Then add the pears, heat through and season with salt, pepper and cayenne pepper.

Approximately 10 minutes before end of cooking the vegetables, Season the lamb loin pieces with salt and pepper and sear in a pan in hot oil for 3-4 minutes on each side.

To serve, divide tajine among 4 plates.

Top each serving with 1 piece lamb loin and sprinkle with cayenne pepper to taste.
