Tofu is a rich source of vegetable protein and contains all the essential amino acids, making it especially an especially beneficial ingredient for vegetarians.

Smoked tofu goes particularly well in this salad, adding a beautiful smoky aroma that pairs well with the other ingredients.

1 inch fresh ginger
1 garlic clove
1 red chili pepper
3 Tbsps dark soy sauce
sesame oil
freshly ground peppers
18 ozs Tofu
1 Cucumber
6 ozs lamb's lettuce
2 Tbsps lemon juice
salt
sugar
1 Tbsp freshly chopped red Thai basil
2 Tbsps light Sesame seeds

Preparation steps

1.

Peel ginger and garlic, chop finely. Rinse chile pepper, cut in half lengthwise, remove seeds and finely chop. Combine soy sauce, ginger, garlic and 5 tablespoons of oil, mix well, season with pepper.

Cut tofu into approximately 1/2"  thick slices, sprinkle with the marinade and let stand for about 30 minutes.

Rinse cucumber and slice into thin slices. Rinse and dry lettuce, separate leaves.

Make vinaigrette by mixing 4 tablespoons of oil with lemon juice and basil.  Season with salt, pepper and a pinch of sugar.

Drain well tofu slices, sprinkle with sesame seeds. Heat 2 tablespoons of oil in a pan and cook tofu until golden brown on all sides. Drain on paper towels. Combine lettuce with cucumber slices , drizzle with vinaigrette and transfer to plates. Top with tofu and serve.
