75 grams sugar
1 Vanilla bean
1 pc organic Orange peel
70 grams Semolina flour
2 eggs
1 Tbsp lemon juice
2 Tbsps cocoa powder

Preparation steps

Boil the milk in a saucepan with 50 grams (approximately ¼ cup) sugar, the slit vanilla bean and the orange peel. Add the semolina while stirring and simmer for 2-3 minutes. Remove from the heat.

Separate the eggs and mix the yolks into the semolina mixture. Allow to cool while stirring occasionally. Remove the vanilla bean and orange peel.

Beat the egg whites with the lemon juice until stiff. Add the remaining sugar and beat again until stiff. Fold the egg whites into the semolina mixture and divide the mixture into halves. Mix the cocoa powder into one half. Fill the 2 mixture portions alternately in layers in cold flushed serving ramekins and chill in refrigerator for at least 2 hours.

Release the pudding from the ramekins onto a plate and serve as desired with a fruit sauce.
