250 grams potatoes (starchy, peeled)
400 grams Apple
1 Tbsp butter
2 tsps Curry powder
750 milliliters Vegetable broth
salt
3 sprigs parsley
1 stalk Leeks (small)
1 tsp vegetable oil
75 grams Whipped cream

Preparation steps

Peel onions, trim and finely dice. Peel apples, cut into quarters, core and cut into small cubes. Heat butter in a saucepan, saute onions and apples, add curry and broth. Simmer for approximately 20 minutes.

In the meantime rinse parsley, shake dry and chop. Rinse leeks, cut into rings and saute in another saucepan with oil until softened.

3.

Puree soup with an immersion blender and strain through a sieve. Add leeks and season with cream, salt and pepper and serve garnished with parsley.
