Preparation steps

Rinse the leeks and cut into 6 cm (approximately 2 1/4 inch) strips. Toast the pine nuts in a dry skillet until golden. Peel and finely chop the garlic. In a bowl, stir the lemon zest with the garlic, chopped parsley and crumbled goat cheese.

Heat the butter in a skillet. Add the leeks and cook until translucent. Stir in some water and season with salt and pepper to taste. Cover and cooke for 4 minutes. Uncover the skillet and cook until the liquid has reduced. Serve in a warm bowl garnished with the goat cheese mixture.
