Preparation steps

1.

Rinse the leeks, trim and cut into 1 cm (approximately 1/2 inch) wide diagonal rings and blanch for about 3 minutes in boiling salted water. Remove, rinse in cold water and drain.

Peel the garlic. Toast the pine nuts in a dry pan, add the butter and leeks and squeeze the garlic through a press. Season with salt and pepper. Sauté 1-2 minutes, deglaze with the vinegar and serve immediately in a warmed bowl.
