4 young Leeks
8 slices Pancetta
7 ozs Cheese (e. g. Gouda, Emmental)
2 Tbsps butter

Preparation steps

Wash and trim the leeks and cook in boiling, salted water for 6-8 minutes, until cooked but still retaining a little bite. Refresh in cold water and drain.

Lay the slices of Pancetta side-by-side in twos, overlapping slightly. Cut the cheese into strips and lay across the slices of ham. Lay a leek across the middle of each and wrap the ham and cheese around it.

Place in a buttered baking dish, dot with the rest of the butter and season well with pepper. Bake in a preheated oven at 400°F for 10-15 minutes, until golden brown. Add a little water if necessary.
