- 3 cups Chicken breasts (cut into approx. 6 cm pieces)
- 2 Tbsps lemon juice
- paprika
- 1 Tbsp olive oil
- 1 Tbsp freshly chopped parsley
- 1 Cantaloupe (peeled, deseeded and very finely sliced)
- 24 slices air-dried ham (e. g. Parma)
Preparation steps
1.
Put the chicken pieces in a bowl. Season with lemon juice and ground black pepper. Mix well to coat. Cover and leave to marinate in the refrigerator for 2 hours.

Heat the oil in a frying pan and fry the chicken for around 4 minutes on all sides until golden, seasoning with salt. Stir in the parsley at the end.
3.
Arrange the slices of melon into small nests on plates. Line the inside of each nest with two slices of ham, and place the fried chicken pieces in the centre. Serve with white bread if desired.
