- For the chicken
- 1 (ready to cook) chicken (approx 1.5 kg)
- 4 garlic cloves
- 1 tsp coarse Sea salt
- 50 grams soft butter
- 1 red Peperoncino
- For the marinade
- 50 milliliters lemon juice
- 200 milliliters Orange juice
- 100 milliliters olive oil
- 2 Tbsps Lemon liqueur (such as, Limoncello)
- 1 Tbsp finely chopped parsley
- 1 organic lemon (zest)
- Also
- 1 Tbsp olive oil
Preparation steps

For the chicken, disassemble into 12 parts.
Peel and finely chop the garlic cloves. Halve the peperoncino, remove the stalk, seeds and ribs and finely chop the flesh. Mix the garlic, salt, butter and hot peppers in a bowl. Coat the poultry parts.
Heat some olive oil in a roasting pan and fry the chicken pieces in it briefly. Put in the oven, pre-heated to 190°C (approximately 375ºF), and bake for 40-45 minutes, regularly basting with the meat juices.

For the marinade, mix the ingredients in a large, deep bowl. Add the fried, hot chicken pieces and turn in the marinade before serving.

If desired, serve with ciabatta.
