Preparation steps

1.

Peel the lemon with a sharp knife. Rinse, remove the seeds and finely dice the flesh, collecting the escaping juice.

2.

Mix the lemon juice with the quark, yogurt and honey. Fold in the pulp.

Rinse the lemon balm and shake dry. Pluck the leaves from 2 stalks, chop and stir into the quark.

Pour the lemon curd into 4 cups and serve garnished with remaining lemon balm.
