1 cup sugar (scant)

Preparation steps

1.
Strain the juice into a bowl through a sieve. Add the butter, sugar and zest and stir over a pan of hot water until the butter is melted.
2.
Whisk the eggs and gradually add to the mixture. Stir in and then stir over hot water until the mixture is thick and creamy.
3.
Pour the curd into jars which have been rinsed in hot water. Seal well, leave to cool and store in the refrigerator.
