2 Tbsps softened butter
100 grams Quark
1 fresh lemon (juiced and zested)
1 tsp Cornmeal
powdered sugar (for dusting)

Preparation steps

Butter 4 small ramekins and sprinkle with sugar.

Separate eggs. Whisk egg yolks with 50 grams (approximately 1.7 ounces) of sugar until white and creamy. Add butter. Strain well drained quark through a fine sieve and add 2 tablespoons of lemon juice and zest. Combine with egg yolk mixture. Beat egg whites until stiff and gradually add remaining sugar. Fold a third of egg whites into egg yolk mixture, sift over flour and carefully fold in remaining egg whites.

Fill 3/4 of ramekins with batter, wipe gently the edges.

Bake soufflés in preheated oven at 200°C (approximatley 400°F) for about 10-15 minutes. Dust with powdered sugar and serve immediately.
