- 40 grams butter (extra for ramekins)
- 75 grams sugar (extra for ramekins)
- 4 eggs
- 1 lemon
- 400 grams Quark
- 2 Tbsps Pastry flour (30 g)
- 1 tsp powdered sugar (5 g)
Preparation steps

Butter 4 soufflé dishes measuring about 15 cm (approximately 6 inches) in diameter and sprinkle with sugar.

Separate the eggs. Wash lemon with hot water, pat dry, remove peel and squeeze out juice.

Beat yolks with butter and 2/3 of the sugar until fluffy. Push quark through a sieve and stir with lemon juice. Add to egg yolk mixture. Beat egg whites until stiff and gradually add remaining sugar. Fold 1/3 of the egg whites into egg yolk mixture. Fold remaining egg whites and flour together. Fold flour mixture into egg yolk mixture.

Pour mixture into ramekins and bake at 200 ° C (approximately 400 ° F) for about 20 minutes.
