- 4 Tbsps Oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (chopped)
- fresh ginger (peeled and grated)
- 1 red chili pepper (deseeded and finely chopped)
- 1 tsp ground cilantro
- 1 tsp ground Cumin
- 1 tsp Curry powder
- 1 cup Red lentils (washed and drained)
- 16 ozs potatoes (peeled and cut into chunks)
- 2 Tomatoes (skinned, deseeded and finely chopped)
- cilantro (to garnish)
- Papadam (to garnish)
Preparation steps

Heat the oil in a large pan and gently cook the onions until soft but not browned.

Add the garlic, ginger, chilli, ground coriander, cumin and curry powder. Cook for 2 minutes then stir in the lentils.
3.
Cook for 2 minutes then add about 500 ml/2 cups water, bring to a boil then add the potatoes and tomatoes. Season with salt and pepper and simmer for 25 minutes or until the potatoes and lentils are very tender.
4.
Serve garnished with the coriander leaves and poppadums.
