300 grams green Lentils
2 onions
40 grams butter
1 Tbsp Pastry flour
1 heaping tsp dried mint
1 ½ Tbsps Tomato paste
freshly ground peppers
1 l Beef broth
100 grams soup noodles
salt
1 tsp ground paprika (sweet or hot as desired)
mint (for garnish)

Preparation steps

1.

For the lentil soup, soak lentils in a bowl of plenty of cold water for 4 hours. Drain in a colander. Peel onions and chop finely.

In a saucepan, heat butter and fry onion over medium heat until they begin to brown slightly. Stir in flour and fry briefly. Add mint, tomato puree and a pinch of pepper and stir. While stirring, add broth and boil.

3.

Add lentils, stir and cook everything over low heat for about 20 minutes or until lentils are tender. Add noodles to the pot and cook for 6-8 minutes following the package instructions and season with salt, pepper and paprika. Serve immediately garnished with mint.
