2 whole trout (kitchen-ready, about 350 grams)
2 garlic cloves
1 Banana leaf (from Asian foods store)laden
½ bunch scallions
1 tsp freshly chopped ginger
2 Tbsps Lime juice

Preparation steps

Rinse the trout and pat dry. Peel garlic and chop coarsely. Rinse scallions and cut both white and green parts into pieces. Puree scallions with garlic, ginger, 1 tablespoon oil, and lime juice. Season puree with salt and pepper and coat the trout with it inside and out. Let marinate for about 1 hour. Wash banana leaf, dry, and cut into 2 pieces large enough to wrap a trout. Lay a fish on each banana leaf half and season with pepper.

Wrap each leaf around the fish, fastening with toothpicks if necessary. Lay the trout parcels on a hot grill and cook 7 minutes on each side, or bake them in a preheated oven at 220°C (approximately 400°F) for about 30 minutes.
