- 4 fresh Clementine
- 30 grams fresh ginger
- 300 milliliters Whipped cream
- 5 egg yolks
- 40 grams sugar
- butter (for molds)
Preparation steps

Rinse the clementines, and grate the zest in strips into a bowl. Set aside. Peel the clementines completely and separate into individual segments. Remove any remaining pith as well. Peel and finely grate the ginger. Preheat the oven to 180°C (approximately 350°F).

Whisk together the cream, egg yolks, sugar and ginger. Grease 4 ramekins with butter, arrange the clementine slices in the bottom of each ramekin, then cover with the egg mixture. Bake in the preheated oven for 25-30 minutes. Serve warm or cold, garnished with the clementine zest.
