- ½ lobster (cooked, meat removed from shell)
- 4 leaves Radicchio
- 1 Avocado (ripe)
- 1 shallot
- 1 lemon (zested and juiced)
- 4 sprigs Dill
- 4 sprigs Chives
- salt

- 1 Tbsp sun-dried tomato pesto
- 2 Tbsps vegetable oil
- 1 tsp White vinegar
- ½ garlic clove
- 4 lemons (very thinly sliced, lightly candied)
Preparation steps

Halve avocados, remove pits and scoop out flesh. Coarsely chop avocado and mix with lemon juice. Peel and very finely chop shallot. Mix shallot with avocado and divide mixture among plates. Rinse radicchio leaves and shake dry.

Top avocado with lobster and radicchio and garnish with dill, chives, lemon zest and lemon slices (reserving 1 slice for the vinaigrette).

For the vinaigrette, mix pesto with oil, vinegar and a finely chopped lemon slice. Thin with 1-2 tablespoons water, if needed, and drizzle decoratively over salads.
